Tasty, low-cal appetizers: Poha rolls

As the last part of the 5-part series, here's a mouth-watering low-cal, non fried recipe from Shakuntala Saraf's cookbook Simply Starters.
Poha Rolls
Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 10-12
Ingredients:
2 cups beaten rice flakes
1 cup green peas
2-3 green chillies
10-12 curry leaves, finely chopped
1/4 cup peanuts, coarsely ground
4-6 tsp lemon juice
3-4 tsp sugar
1/2 cup potatoes, boiled and chopped
1/2 tsp mustard seeds
1/4 tumeric powder
4 tsp oil
1 cup grated carrots (for garnishing)

Method:
Heat oil in a pan.
Add mustard seeds to the pan. When they start sputtering, add green chillies and curry leaves.
Add green peas and 2 tbsp of water. Cook until the peas are soft.
Add tumeric powder, lemon juice, sugar, salt and peanuts. Mix well.
Add the potato and cook for a minute.
Now add the rice flakes and mix well.
Take about 1 tbsp of this mixture and shape it into a cutlet.
Roll the cutlet in the grated carrots and place it in an oven tray.
Warm it up before serving.
Mint Chutney:
1 cup mint leaves, chopped
1/2 cup coriander, chopped
2 medium sized green chillies
1/2 inch ginger
2 tsp lemon juice
1 tsp sugar
salt
Combine all ingredients in a mixer and blend well to a smooth paste. Add water if the paste is too thick.
Regrigerate and use when required.
Serving:
Serve warm with mint chutney.
