Tasty, low-cal appetizers: Poha rolls

As the last part of the 5-part series, here's a mouth-watering low-cal, non fried recipe from Shakuntala Saraf's cookbook Simply Starters.

Poha Rolls

Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 10-12

Ingredients:

  • 2 cups beaten rice flakes
  • 1 cup green peas
  • 2-3 green chillies
  • 10-12 curry leaves, finely chopped
  • 1/4 cup peanuts, coarsely ground
  • 4-6 tsp lemon juice
  • 3-4 tsp sugar
  • 1/2 cup potatoes, boiled and chopped
  • 1/2 tsp mustard seeds
  • 1/4 tumeric powder
  • 4 tsp oil
  • 1 cup grated carrots (for garnishing)
  • salt

    Method:

  • Heat oil in a pan.

  • Add mustard seeds to the pan. When they start sputtering, add green chillies and curry leaves.

  • Add green peas and 2 tbsp of water. Cook until the peas are soft.

  • Add tumeric powder, lemon juice, sugar, salt and peanuts. Mix well.

  • Add the potato and cook for a minute.

  • Now add the rice flakes and mix well.

  • Take about 1 tbsp of this mixture and shape it into a cutlet.

  • Roll the cutlet in the grated carrots and place it in an oven tray.

  • Warm it up before serving.

    Mint Chutney:

  • 1 cup mint leaves, chopped
  • 1/2 cup coriander, chopped
  • 2 medium sized green chillies
  • 1/2 inch ginger
  • 2 tsp lemon juice
  • 1 tsp sugar
  • salt

    Combine all ingredients in a mixer and blend well to a smooth paste. Add water if the paste is too thick.
    Regrigerate and use when required.

    Serving:

    Serve warm with mint chutney.
