Chicken/ Vegetable Pav Bhaji
1 onion, chopped
1 tsp ginger-garlic paste
2 tbsp tomato purée
1/2 tsp pav bhaji masala or garam masala
1/2 cup beans and carrots, finely chopped and boiled in a little water for two minutes
1 capsicum, chopped fine
1 boiled potato, mashed
1/4 cup coriander leaves, finely chopped
1 cup boiled chicken, shredded (optional)
2 tsp oil
Salt to taste
Butter, a small knob (optional)
Fry the onions till brown.
Then add the ginger-garlic paste and tomato purée.
Lower the flame, cover and cook this mixture the oil separates from the paste.
Now add the masala powder, vegetables, chicken (optional) and salt and mix properly.
Cover and cook on low flame till nearly dry.
Garnish with coriander leaves and butter.
Serve with pav/ chapattis/ naan.
This also makes for a great filling for sandwiches (toasted or plain).
